We’re here in the middle of the summer season, and I know for a lot of you that’s going to mean fishing season. This week on Warehouse Hunts we’re going to dive right in and check out a few of the different fillet knives we have in stock.

First up is the CRKT Big Eddy, designed by Russ Kommer. For being the lowest price entry of this group, this is actually a really fantastic fillet knife. As opposed to the traditional symmetrical grind you usually see on a filet knife, this one has a hollow grind on the top side and a flat grind on the bottom. Blade is made from 420J2 stainless steel, and in addition to the unique grind has triple point serrations to get through bones and gristle. Blade is 6.75″ long. The Big Eddy has an ergonomically shaped glass filled nylon handle with rubber grip injection, and also includes a sheath with belt loop.

Next up we have a nice little folding fillet knife from Case. This is a really nice looking model, with the nickel silver bolsters and watermelon bone handle, so you can look very elegant while you’re slicing up your dead fish. There are two 4.25″ blades, a traditional filet knife and a scaler with hook disgorger on the end. For a little extra functionality there’s a diamond sharpening stone built into the side of the handle.

Moving back to the fixed blade models we have the Helle Fiskekniv, made in Norway of course. This is a pretty utilitarian knife, but it’s made from great materials. The Sandvik 12C27 stainless steel blade is shaped a little differently from what we’re used to on a fillet knife, and it doesn’t have the give that you expect. That said it’s still razor sharp. Handle is a nice piece of birch that feels extremely comfortable to hold. The Fiskekniv comes with a beautiful leather sheath.

Finally, at the top of our price scale, we have the Step-Up fillet knife from White River. Blade is 6″ long and made from 440C stainless steel. The handle on this one is made of cork, which means if your slippery hands lose this guy over board it’s going to float for you. The unique stepped shape makes for a much more ergonomic cutting angle, so this is very comfortable to hold. Included is a leather sheath, with belt loop AND a strap that snaps into the end of the blade to keep it securely in place.
